Ingredients

๐Ÿฃ 14 oz of Tofu, extra firm
๐Ÿ„ 12 mini portobello mushrooms, sliced
๐ŸŒถ๏ธ 1 yellow bell pepper, sliced
๐ŸŒฟ 1โ„4 cup of fresh chopped cilantro
๐ŸŒฐ 3 tbsp of sesame seed oil
๐Ÿฌ 2 tbsp of palm sugar
๐Ÿง„ 1 tbsp of minced garlic
๐Ÿœ 2 tbsp of soy sauce
๐ŸŸ 1 tbsp of fish sauce
๐Ÿฅฌ 6 cups of fresh baby spinach
๐Ÿ‹ Juice of one lime
๐Ÿฅœ 1โ„4 cup of chopped roasted peanuts


Instructions

1- Cook the Pasta:

  • In a large pot, bring about 10 cups of water to a boil. Add 1 tablespoon of salt to the water.
  • Once boiling, add the squid ink pasta and cook for about 8 minutes or until al dente. Drain and set aside.

2- Prepare the Vegetables:

  • In a nonstick pan or wok, add the sliced mushrooms and allow them to sweat. Cook until they soften and release their juices.
  • Add the sesame seed oil and sliced yellow bell pepper to the pan. Stir-fry for about 3 minutes until the peppers start to soften.

3- Create the Sauce:

  • Incorporate the palm sugar and minced garlic, stirring well to combine.
  • Add the soy sauce, fish sauce, and fresh spinach to the pan. Stir and cook for an additional 3 minutes.

4- Combine Tofu and Pasta:

  • Crumble the extra firm tofu into medium-sized chunks and add it to the pan. Sautรฉ and stir for about 5 minutes until heated through.
  • Add the cooked pasta to the pan, stirring until the pasta is hot and well-coated with the sauce.

5- Finish and Serve:

  • Squeeze the juice of one lime over the dish, remove from heat, and serve immediately.
  • Top with fresh chopped cilantro and toasted chopped peanuts for added flavor and crunch.
