Pasta for Tina
- 🍝 8.8 oz of Black ink squid pasta
- 🍣 14 oz of Tofu, extra firm

- 🐟 1 tbsp of fish sauce
- 🥬 6 cups of fresh baby spinach
- 🍋 Juice of one lime
- 🥜 1⁄4 cup of chopped roasted peanuts

Ingredients
🍝 8.8 oz of Black ink squid pasta
🍣 14 oz of Tofu, extra firm
🍄 12 mini portobello mushrooms, sliced
🌶️ 1 yellow bell pepper, sliced
🌿 1⁄4 cup of fresh chopped cilantro
🌰 3 tbsp of sesame seed oil
🍬 2 tbsp of palm sugar
🧄 1 tbsp of minced garlic
🍜 2 tbsp of soy sauce
🐟 1 tbsp of fish sauce
🥬 6 cups of fresh baby spinach
🍋 Juice of one lime
🥜 1⁄4 cup of chopped roasted peanuts
Instructions
1- Cook the Pasta:
- In a large pot, bring about 10 cups of water to a boil. Add 1 tablespoon of salt to the water.
- Once boiling, add the squid ink pasta and cook for about 8 minutes or until al dente. Drain and set aside.
2- Prepare the Vegetables:
- In a nonstick pan or wok, add the sliced mushrooms and allow them to sweat. Cook until they soften and release their juices.
- Add the sesame seed oil and sliced yellow bell pepper to the pan. Stir-fry for about 3 minutes until the peppers start to soften.
3- Create the Sauce:
- Incorporate the palm sugar and minced garlic, stirring well to combine.
- Add the soy sauce, fish sauce, and fresh spinach to the pan. Stir and cook for an additional 3 minutes.
4- Combine Tofu and Pasta:
- Crumble the extra firm tofu into medium-sized chunks and add it to the pan. Sauté and stir for about 5 minutes until heated through.
- Add the cooked pasta to the pan, stirring until the pasta is hot and well-coated with the sauce.
5- Finish and Serve:
- Squeeze the juice of one lime over the dish, remove from heat, and serve immediately.
- Top with fresh chopped cilantro and toasted chopped peanuts for added flavor and crunch.
