Tepache is a traditional Mexican beverage that's naturally fermented, and it's delightfully refreshing with a tangy kick. This version is healthier, using honey and agave instead of traditional sugar, while still providing a probiotic-rich boost for your gut. Perfectly served on warm days over ice, this drink is both a treat and a digestive aid.

Ingredients

🍍 Peels from 1 ripe pineapple (well washed)
🍍 Pineapple core (optional, or a few chunks for extra sweetness)
💧 4–6 cups filtered water (enough to cover the solids)
🍯 3–4 tablespoons raw honey
🌵 1–2 tablespoons agave syrup
🌿 1 cinnamon stick
🌿 2–3 whole cloves

Instructions

1- Prepare the Pineapple:

  • Thoroughly wash your pineapple using a produce brush to remove dirt and wax.

2- Combine Ingredients:

  • In a large, clean glass jar, place the pineapple peels (and the core or fruit chunks if using).
  • Add the honey, agave syrup, and spices.

3- Add Water:

  • Pour enough filtered water to cover the ingredients, ensuring you leave about 2 inches of space at the top to allow gas to build during fermentation.

4- Ferment:

  • Stir the mixture well, then cover it with a clean cloth secured with a rubber band.
  • Leave the jar at room temperature for 2–3 days to ferment.

5- Check Fermentation:

  • Check daily—when the mixture smells sweet, tangy, and slightly fizzy, it’s ready.

6- Finish and Store:

  • Remove any foam formed on top, then strain the liquid and transfer it into a clean bottle or jar.
  • Store the tepache in the refrigerator to halt further fermentation and keep it fresh.

7- Serve:

  • Serve chilled over ice and enjoy your refreshing, probiotic-rich beverage!
