Ingredients

For the Cake:
🥄 1.5 cups all-purpose flour
🥄 1 tsp baking powder
🥄 1 tsp baking soda
🥄 1 tsp ground cinnamon

🥚 6 eggs

🥕 1 cup carrot puree
🥕 2 cups shredded carrots
🥜 1 cup chopped walnuts
🍇 1/2 cup raisins

For the Icing:
🥛 12 oz whipped cream cheese
🧈 13 oz whipped butter
🍚 1 cup powdered sugar
🍦 2 tsp vanilla extract

Instructions

1- Prepare the Cake Batter:

Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine all the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, beat the eggs and sugar together until light and fluffy. Stir in the carrot puree.
Gradually add the dry ingredients to the wet mixture, stirring gently until the batter is smooth and lump-free.
Fold in the shredded carrots, chopped walnuts, and raisins until evenly distributed.

2- Bake the Cake:

Grease a 12-inch round cake pan with cooking spray.
