Tortitas de Camarón
A popular Mexican dish, especially during Lent, Tortitas de Camarón (Shrimp Patties) are fluffy, flavorful, and less oily than traditional versions. They pair wonderfully with a tomato sauce or as a standalone dish.
Ingredients
🥚 5 eggs
🍤 4-5 tbsp of shrimp powder
To make the shrimp powder
🍤 8 shrimp
🍋 1/2 lime
🍃 1 bay leaf
🧂 1 tbsp of salt
🧄 2 garlic cloves
🧂 1/4 tsp of black pepper

Instructions
1. Prepare the shrimp powder
o Boil the shrimp with lime juice, bay leaf, black pepper, garlic cloves, and salt in enough water to submerge everything. Cook until the shrimp turn pink (5-8 minutes).
o Cool the shrimp, peel, and slice thinly.
o Place the shrimp and peels on a food dehydrator tray and dry at 145°F for 2 hours, then at 125°F for 6 hours (or until the shrimp are hard). Alternatively, use the "keep warm" function in an oven if available.
o Grind the dried shrimp into a fine powder using a blender or coffee grinder.
2. Prepare the egg mixture
o Separate the egg whites and place them in a bowl. Add the yolks to a small bowl and set aside.
o Whip the egg whites until they form stiff peaks (the mixture should not fall if the bowl is flipped).
o Gently fold in the yolks, then mix in the shrimp powder.
3. Cook the tortitas
o Heat a nonstick pan over low to medium heat. Lightly oil the pan using a paper towel.
o Spoon the egg mixture into the pan, shaping the tortitas to your desired size.
o Place an ice cube in the center of the pan and cover with a lid. Let the tortitas steam.
o When the steam subsides, uncover, flip the tortitas, and add another ice cube. Cover again and cook until golden brown.
4. Serve
o Remove the tortitas from the pan once they are golden on both sides. Serve warm, optionally paired with a tomato sauce or other accompaniments.

• Shrimp powder can be made ahead of time and stored in a jar for future use.
• These tortitas are delicious with a side of rice, beans, or in a taco.
