Grasshopper Quesadilla

Ingredients:
🦗 1 cup grasshoppers (cooked or dried)
🧀 1 cup shredded mozzarella cheese
🌽 2 cups blue corn flour
💧 1 1/2 cups water
🧂 A pinch of salt
Instructions:
- Prepare the Dough:
- In a mixing bowl, combine the blue corn flour with a pinch of salt.
- Gradually add water while mixing the ingredients with your hands until a dough forms. It should be moist but not sticky.
- Shape the Tortillas:
- Divide the dough into small golf ball-sized portions.
- Press each portion between your palms to form flat discs or use a tortilla press for a more uniform shape.
- Cook the Tortillas:
- Heat a dry skillet over medium-high heat.
- Place each tortilla onto the skillet and cook for about 2 minutes on each side until they begin to puff and brown lightly. Set aside.
- Assemble the Quesadillas:
- On each tortilla, sprinkle an even layer of mozzarella cheese followed by a handful of grasshoppers.
- Fold the tortilla in half to encase the filling.
- Cook the Quesadillas:
- Return the filled tortillas to the skillet.
- Cook each side for about 2-3 minutes or until the cheese is melted and the tortillas are crisp and golden brown.
- Serve:
- Remove from the skillet and serve hot. These quesadillas pair excellently with your favorite salsa or guacamole.
