Mexican Cauliflower Rice

Ingredients:
🥦 1 cauliflower (florets only)
🛢️ 2 tsp cooking oil
🧅 1/4 onion, chopped
🌶️ 1 jalapeño, deseeded and chopped
🥄 2 tsp tomato and chicken bouillon
🌿 1/4 tsp cumin
🧂 1/4 tsp salt
🧄 2 garlic cloves, minced
🌱 A few stems of cilantro
Instructions:
- Prepare the Cauliflower: Clean the head of cauliflower and cut it into florets. Place the florets in a food processor and pulse until they resemble the texture of rice. Be careful not to over-process, as you want the pieces small but not mushy.
- Cook the Vegetables: Heat the cooking oil in a pan over medium heat. Add the chopped onion and jalapeño. Sauté until the onion is translucent and the jalapeño is fragrant, about 3-4 minutes.
- Add the Cauliflower: Stir in the processed cauliflower rice, mixing well with the sautéed onion and jalapeño.
- Season: Sprinkle in the tomato and chicken bouillon, cumin, and salt. Add a splash of water to help distribute the seasoning evenly. Stir all ingredients thoroughly.
- Finish and Serve: Add the minced garlic and cilantro to the pan. Cover and cook on high heat for about 2 minutes, then remove from heat. The cauliflower rice should be tender with a slight bite to it.
- Enjoy: Serve hot as a flavorful side dish to your favorite Mexican-inspired meals.
