Instructions
1. Prepare the Filling
o In a mixing bowl, combine shredded chicken, shredded cheese, chopped cilantro, and chopped jalapeño (if using).
o Season with salt and black pepper to taste.
o Mix until all ingredients are well combined.
2. Assemble the Flautas
o Warm the corn tortillas to make them pliable. This can be done by heating them in a dry skillet for a few seconds on each side or wrapping them in a damp paper towel and microwaving for about 20 seconds.
o Place approximately 2 tablespoons of the filling mixture along the center of each tortilla.
o Tightly roll the tortilla around the filling to form a cylinder.
o Secure the seam with a toothpick if necessary to keep the flauta from unrolling.
3. Fry the Flautas
o In a skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
o Carefully place a few flautas seam-side down into the hot oil, being careful not to overcrowd the pan.
o Fry for 2–3 minutes per side, or until they are golden brown and crispy.
o Use tongs to remove the flautas from the oil and place them on a plate lined with paper towels to drain excess oil.
o Repeat the frying process with the remaining flautas.
4. Serve
o Remove any toothpicks from the flautas before serving.
o Serve the flautas hot, accompanied by guacamole, salsa, sour cream, shredded lettuce, and lime wedges.
Cooking and Serving Tips
• Tortilla Handling: Warming the tortillas before filling and rolling helps prevent them from cracking.
• Filling Variations: Flautas can be filled with various ingredients such as beef, beans, or vegetables to suit different tastes.
• Baking Option: For a lighter version, brush the assembled flautas with oil and bake in a preheated oven at 400°F (200°C) for 15–20 minutes, or until crispy.
• Storage: Leftover flautas can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in an oven or air fryer to maintain crispiness.
Enjoy these crispy and flavorful flautas as a delightful addition to your meal!
