Pork Rack a la Mexicana

Ingredients:
- 🐖 1 pork rack
- 🍺 2 beers
- 🧈 Lard for frying
- 🫒 2 tbsp. cooking oil
- 🧅 1/2 onion, chopped
- 🧄 1 minced garlic clove
- 🌶️ 1 bell pepper, small-diced
- 🍅 2 Roma tomatoes, diced
- 🌿 1/2 cup of chopped cilantro
- 🧂 Salt to taste
- ⚫ Black pepper to taste
Instructions:
Marinate the Pork: Begin by removing the thin membrane from the back of the pork ribs by inserting your fingers under one of the ribs. First, trim any excess fat from the pork rack. Place the rack into a bowl, add salt and pour one beer over it. Cover and marinate in the refrigerator for 24 hours.
Preheat and Prepare: After marinating, remove the pork rack from the beer and pat it dry with paper towels. Discard the beer marinade. Preheat lard in a large pan over medium heat until melted and hot.
Fry the Pork Rack: Carefully fry the pork rack in the hot lard until it develops a golden-brown crust on all sides. This should take about 5-7 minutes per side. Once browned, remove from pan and set aside.
Make the Salsa: In the same pan, add the cooking oil. Sauté the chopped onion and minced garlic over medium heat until translucent. Add the diced bell pepper and continue to cook for 2-3 minutes until softened.
Combine with Tomatoes and Cilantro: Add the diced Roma tomatoes and chopped cilantro to the pan. Pour the remaining beer to create a rich salsa. Season with salt and black pepper to taste. Simmer the mixture for about 10 minutes until it thickens slightly.
Final Assembly: Pour the prepared salsa over the fried pork rack. Ensure the pork reaches an internal temperature of at least 145 degrees Fahrenheit for safe consumption.
