Pepper Jack Upside Down Puff Pastry

Ingredients
🥐 1 puff pastry pack
🥚 6 eggs
🌶️ 1 red bell pepper
🌶️ 3 jalapeños
🧅 1/2 onion
🧀 12 slices of pepper Jack cheese
🧂 Zesty Anything bagel seasoning
🫒 Olive or cooking oil for brushing
Instructions
1- Preparation:
- Preheat your oven to 380°F (195°C).
- Dice the red bell pepper, jalapeños, and onion into small pieces. Mix them together.
2- Assemble Pastries:
- Line a baking sheet with parchment paper.
- Divide the pepper, jalapeño, and onion mix into six small piles on the baking sheet, spaced apart.
- Lay a slice of pepper jack cheese on top of each pile.
- Cut the puff pastry into six equal squares and drape each square over the cheese-covered vegetable piles.
3- Bake Pastries:
- Brush the tops of the puff pastry with olive or cooking oil.
- Sprinkle lightly with the zesty anything bagel seasoning.
- Bake for 15 minutes, or until the pastry is golden brown and crispy.
4- Poach the Eggs:
- In a pot of simmering water, gently place eggs using a strainer to help get rid of excess runny whites.
- Poach until the egg whites are set and firm.
- Remove and let them drain on paper towels.
5- Finish and Serve:
- Once the pastries are ready, carefully flip them over.
- Place two poached eggs on top of each pastry and add another slice of pepper jack cheese.
- Return to the oven briefly until the cheese begins to melt.
- Serve immediately and enjoy!
