Ingredients:
For the Meat Sauce:
🌶️ 4 guajillo peppers
🔥 2 dried chipotles
🧄 3 garlic cloves
🧅 1/2 onion
💧 4 cups of water
🌶️ 6 banana peppers
🌶️ 2 large jalapeños
🥄 2 tablespoons cooking oil
🧅 1/2 onion, diced
🥩 1 pound of ground beef
🧂 Salt
🌶️ Black pepper
🌿 1 tablespoon Mexican oregano
For the Lasagna:
🧀 12 ounces queso fresco, crumbled
🍶 16 ounces of Mexican crema
🍝 1 (16-ounce) package of lasagna pasta
🧀 2 cups shredded Oaxaca cheese
🌿 Freshly chopped cilantro for garnish
Instructions:
- Prepare the Peppers and Sauce:
- Boil the guajillo peppers, dried chipotles, and half an onion in 4 cups of water until tender. Blend the softened vegetables with some cooking liquid to form a smooth sauce and set aside.
- Char and Chop Fresh Peppers:
- Char the banana peppers and jalapeños directly on a gas stove burner or grill until blackened. Chop them finely without removing the seeds for added heat. If grilling is not an option, broil them in the oven instead.
- Cook the Meat:
- Heat 2 tablespoons of cooking oil in a pan over medium heat. Cook the diced onion until translucent. Add the ground beef, breaking it apart with a spoon. Season with salt, black pepper, and Mexican oregano. Mix in the prepared pepper sauce and adjust seasoning as needed. Set aside.
- Assemble the Lasagna:
- In a 9x13-inch oven-safe dish, start by layering the uncooked lasagna pasta. Spoon on some Mexican crema and queso fresco, then spread a layer of the meat sauce. Repeat these layers three more times, finishing with a final pasta layer on top.
