Ingredients:

  • 🌶️ 2 guajillo peppers (no seeds or stems)
  • 🧅 1/4 onion
  • 🧈 1 stick of butter (melted and cooled)
  • 🧄 3 cloves of garlic
  • 🌿 1 teaspoon Mexican oregano
  • 🌿 1 pinch of cumin
  • 🦞 2 lobster tails
  • 🧂 Salt (to taste)

Instructions:

  1. Prep the Guajillo Peppers:

    • Remove the seeds and stems from the guajillo peppers.
    • Place the guajillo peppers and onion into a small pot.
    • Fill the pot with enough water to cover the ingredients.
    • Bring the pot to a boil and let simmer for about 10 minutes, or until the peppers and onion are tender.
  2. Prepare the Sauce:

    • Once softened, drain the water from the pot and transfer the peppers and onion to a blender.
    • Add the melted and cooled butter, garlic cloves, Mexican oregano, and a pinch of cumin to the blender.
    • Blend the mixture until smooth and creamy. Adjust seasoning with salt to taste.
  3. Cook the Lobster Tails:

    • Preheat a large skillet or griddle over medium heat.
    • Generously coat the back of each lobster tail with butter.
    • Pour part of the blended guajillo sauce over the lobster tails, ensuring they're well-coated.
    • Turn the heat to low and allow the lobster tails to cook in the sauce for about three minutes, cooking gently and evenly.
  4. Finish and Serve:

    • Once the lobster tails are cooked through, they should be opaque and tender.
    • Serve immediately, drizzling any remaining sauce over the lobster for an extra punch of flavor.
