Instructions
1. Prepare the Kale
o Wash the kale leaves thoroughly under cold water and pat them dry with a clean kitchen towel or paper towels.
o Remove the tough stems from the kale by holding the stem with one hand and pulling the leafy part away with the other.
o Tear the kale leaves into bite-sized pieces. Make sure the leaves are completely dry before frying to avoid oil splatters.
2. Heat the Oil
o In a large skillet or frying pan, heat the olive oil over medium-high heat.
o Test if the oil is ready by dropping a small piece of kale into the pan; it should sizzle immediately.
3. Fry the Kale
o Add a handful of kale to the hot oil, being careful not to overcrowd the pan.
o Fry the kale for 2-3 minutes, flipping with tongs to ensure even cooking. The edges should become crispy, and the leaves will turn a vibrant green.
o Remove the fried kale with tongs and transfer to a plate lined with paper towels to drain excess oil.
o Repeat with the remaining kale, adding more oil to the pan if needed.
4. Season and Serve
o While the kale is still warm, sprinkle it with salt and black pepper to taste.
o Squeeze fresh lemon juice over the kale for a zesty finish, if desired.
