Ingredients

🧄 1⁄2 tsp garlic powder
🌶️ 1⁄2 tsp paprika
🧂 1⁄2 tsp salt
🛢️ Neutral oil for frying
For the Dressing:
🥛 1 cup plain yogurt
🥄 1⁄4 cup mayonnaise
🍋 1 tsp lime juice
🌿 1⁄4 tsp dill weed
Instructions
1- Prepare the Kale and Batter:
- Begin by preparing your kale. Ensure it is stemless, clean, and dry.
- In a large mixing bowl, combine the rice, eggs, and water to form a batter.
- Add coriander, turmeric, onion powder, garlic powder, paprika, and salt. Mix well to integrate all spices evenly.
- Gently fold in the kale until all leaves are well coated with the batter.
2- Fry the Fritters:
- Heat a sufficient amount of neutral oil in a deep frying pan.
- Using a spoon or a small scoop, drop spoonfuls of the kale batter into the hot oil.
- Fry the fritters until they are golden brown and crispy on both sides, usually about 2-3 minutes per side.
- Remove from the oil and drain on paper towels to remove excess oil.
3- Make the Dressing:
- In a medium bowl, combine plain yogurt, mayonnaise, lime juice, and dill weed.
- Whisk until smooth and creamy. Taste and adjust lime juice or dill as preferred.
4- Serve:
