Instructions
1. Add the turkey necks, onion, garlic, dried chipotle, bay leaf, peppercorns, and water to a pot. Cook on high heat for 30 minutes. Skim off any foam that rises to the surface. Strain the stock and set aside 4 cups of it.
2. In a separate pot over medium heat, toast the flour lightly, stirring constantly to prevent browning. Add the butter and whisk until a smooth paste forms.
3. Gradually add the strained stock to the flour and butter mixture, whisking constantly to prevent lumps.
4. Season the gravy with black pepper and salt to taste. Simmer for 5-10 minutes until the gravy thickens to your desired consistency.
