Smoked Turkey and Chipotle Gravy

This Smoked Turkey and Chipotle Gravy combines the deep, savory flavors of smoked turkey with a hint of smoky heat from chipotle peppers. Ingredients
🦃 1 raw turkey neck
🦃 2 smoked turkey necks
🧅 1/4 of an onion
🧄 5-6 garlic cloves
🌶️ 1 dried chipotle pepper
🌿 1 bay leaf
🫚 2 teaspoons peppercorns
💧 4.5 cups of water
🌾 1/2 cup of flour
🧈 4 tablespoons of butter
🧂 Salt and black pepper to taste
Instructions
1- Prepare the Stock:
- Combine the raw turkey neck, smoked turkey necks, onion, garlic cloves, dried chipotle pepper, bay leaf, and peppercorns in a large pot. Add 4.5 cups of water, ensuring everything is submerged.
- Bring to a boil over high heat. Once boiling, reduce the heat and simmer for 30 minutes.
- Skim off any foam that forms on the surface with a spoon. Strain the stock into a separate container, discarding the solids. Reserve 4 cups of stock for the gravy.
2- Make the Gravy Base:
- In a separate saucepan, add the flour over medium heat. Stir continuously with a whisk to gently toast it without letting it turn brown.
- Once the flour is slightly toasted, add the butter. Mix well to form a smooth paste (roux).
3- Finish the Gravy:
- Gradually pour the reserved turkey stock into the roux, whisking constantly to prevent lumps from forming.
- Continue to whisk until the gravy is smooth and reaches the desired thickness.
- Season with salt and black pepper to taste.
4- Serve:
- Once the gravy is smooth and flavorful, remove from heat. Serve it warm alongside your turkey and other dishes.
