Instructions
1. Mix the Dry Ingredients
o Add the flour, salt, baking powder, and shortening to a mixer. Mix until the shortening breaks up and incorporates into the flour, creating a powdery texture without chunks.
2. Incorporate the Hot Water
o Heat water until just boiled, then let it cool slightly for 2 minutes.
o Add the hot water to the mixer in 4 parts, scraping the sides of the bowl with a spatula to ensure even mixing.
3. Knead the Dough
o Continue mixing until the dough separates cleanly from the bowl.
o Transfer the dough to a working surface and knead briefly until smooth. Shape into a ball and return it to the bowl.
o Cover the bowl with a cloth and let the dough rest for 20-30 minutes.
4. Form the Testales
o Divide the dough into portions about 3 tablespoons in size. Roll each portion into a smooth ball, forming "testales."
5. Roll the Tortillas
o On a floured surface, roll each testal into a thin tortilla. The shape doesn’t need to be perfect; aim for thin and even.
6. Cook the Tortillas
o Heat a griddle or comal over low to medium heat.
o Place a tortilla on the griddle and cook until bubbles form, about 15 seconds. Flip and cook for another 15 seconds.
o Flip one last time and cook for an additional 15 seconds, ensuring the tortilla has turned white and has brown spots.
o Repeat with the remaining dough, cooking tortillas as you roll them to prevent drying.
7. Storage
o Store cooked tortillas in a cloth to keep them warm.
o Testales and uncooked tortillas can be stored in zip bags in the fridge for up to 7 days, ready to cook when needed.
