Ingredients:
🥫 1 (28 oz) Can of Nopalitos (tender cactus)
🧅 1/4 of an onion, thinly sliced
🌶️ 3 guajillo peppers
🌶️ 1 ancho pepper
🌶️ 5-8 Chiles de Árbol (optional, for extra spice)
🧄 2 garlic cloves
🧂 1/2 tsp of cumin
🧂 1 tsp of onion powder
🧂 1 tsp of garlic powder
🍃 1 tsp of Mexican oregano
🧂 Salt and black pepper to taste
Instructions:
1- Prepare the Peppers:
- In a pot, combine the guajillo peppers, ancho pepper, chiles de árbol, one quarter of an onion, and garlic cloves. Add enough water to cover, and boil for about 15 minutes or until the peppers are tender.
2- Blend the Sauce:
- Transfer the boiled ingredients to a blender, using half of the boiling liquid to aid in blending. Blend until smooth and set the sauce aside. Reserve the remaining liquid for later use.
3- Sauté the Onion:
- In a separate pot, over medium heat, add a little cooking oil. Sauté the thinly sliced onion until translucent.
4- Cook the Nopalitos:
- Add the drained nopalitos to the pot with the sautéed onion. Stir in the blended sauce.
5- Enhance the Flavor:
- Rinse out the blender with the reserved liquid and pour it into the pot. Add the cumin, onion powder, garlic powder, Mexican oregano, salt, and black pepper to taste.
6- Simmer:
- Allow the mixture to cook for 5 to 10 minutes, letting the flavors meld together. Adjust seasoning to taste, if needed.
Cooking Tips:
- Serve this dish as a savory side or as a condiment over tacos or grilled meats.
- For a milder flavor, reduce the amount of Chiles de Árbol.
