Ingredients:
Turkey Breast:
- 🦃 1 (3 lbs) turkey breast
Pastor Marinade:
- 🌶️ 3 guajillo peppers
- 🧄 4 garlic cloves
- 🍃 3 bay leaves
- 🧅 1/2 onion
- 🌿 1 cinnamon stick
- 🔴 3.5 oz achiote paste
- 🌿 1/2 tsp cumin
- ⚪ 1 tsp white pepper
- 🌿 1 tsp Mexican oregano
Stuffing:
- 🥓 5 strips of bacon
- 🧅 1/2 onion
- 🧄 2 minced garlic cloves
- 🍍 2 cups diced pineapple
- 🍗 2 cups chicken stock
- 🍞 6 cups of your favorite stuffing mix
Additional:
- 🧵 Kitchen twine
- 📦 Plastic wrap
Instructions:
- Prepare the Pastor Marinade:
- Boil the guajillo peppers, garlic cloves, bay leaves, half onion, and cinnamon stick in a pot.
- Once softened, remove the cinnamon stick and bay leaves. Blend the mixture with achiote paste, cumin, white pepper, Mexican oregano, and some water from the boiling pot to form a smooth marinade.
- Make the Stuffing:
- In a pan, cook the bacon until crispy. Remove and chop into small pieces.
- In the same pan, sauté half an onion and the minced garlic until soft.
- Add the diced pineapple and chicken stock to the pan. Stir well.
- Mix in the crisped bacon and your favorite stuffing mix. Let it cook for a few minutes until fully combined. Set aside.
- Prepare the Turkey Breast:
- Slice the turkey breast horizontally into three or four parts. Place plastic wrap on both sides and use a meat tenderizer to flatten to an even thickness.
- Season the turkey slices with salt to taste.
- Assemble and Cook:
- Take each turkey slice, brush with a bit of marinade, place a portion of stuffing on it, and roll tightly.
- Secure each roll with kitchen twine.
- Place the rolls in a greased baking dish, pour the remaining marinade over the top, and bake in a preheated oven at 385°F (195°C) for 30 minutes.
- After 30 minutes, brush the turkey with the pan sauce and place under a broiler for a few minutes to caramelize and create a slight char.
- Serve:
- Allow the turkey rolls to rest for a few minutes before slicing. Serve with extra stuffing and enjoy your festive creation.
