Enmoladas
Discover a quick and flavorful way to prepare Mole Chicken Enchiladas with this easy-to-follow recipe. Mole sauce is a beloved traditional Mexican sauce that adds a rich and complex flavor to any dish. Ingredients:
🥫 1 jar of mole (any brand)
🍗 2 cups of chicken stock
🍗 6 chicken thighs, boiled with 3 tbsp. chicken bouillon, salt, and pepper to taste (use the chicken stock from this)
🌽 16 corn tortillas
🌿 Sesame seeds for garnish
Instructions:
- Prepare the Chicken:
- Boil the chicken thighs in a pot with enough water to cover them. Add 3 tablespoons of chicken bouillon, salt, and pepper to taste. Once cooked, shred the chicken and set it aside. Reserve the chicken stock for later use.
 
 - Prepare the Mole Sauce:
- Open the jar of mole sauce. It may have solidified, so use a spoon to scoop it out into a saucepan.
 - Gradually add 2 cups of the reserved hot chicken stock to the mole, stirring continuously over low heat. Continue to stir until the mole becomes creamy and smooth.
 
 - Warm the Tortillas:
- Place the corn tortillas in a microwave-safe zip bag. Microwave them on high for about 30 seconds until warm and pliable. This prevents them from cracking when you roll the enchiladas.
 
 - Assemble the Enchiladas:
- Take one warm tortilla and place some shredded chicken in the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat the process with the remaining tortillas and chicken.
 
 - Add Mole Sauce:
- Once all tortillas are rolled, pour the warm mole sauce evenly over the enchiladas in the baking dish.
 
 - Garnish and Serve:
- Sprinkle sesame seeds generously over the top of the enchiladas for added texture and flavor.
 - Serve hot and enjoy this delicious Mexican classic!
