Veggie Pancake
Pancake Delight. Drawing inspiration from Japanese okonomiyaki, this crispy and colorful dish combines an array of fresh vegetables with a savory batter and tantalizing toppings. Perfect for a light lunch or a delightful snack!
Ingredients
🥦 Broccoli (include stems)
🥒 Zucchini
🥬 Brussels sprouts
🌶️ Jalapeño
🧅 Green onion
🫑 Red bell pepper
🌿 Radish
🥣 2 cups of all-purpose flour
💧 2 cups of water (room temperature)
🛢️ Cooking oil
🍾 A little bit of sesame oil
🥄 Kewpie Japanese mayonnaise
🍶 Okonomi sauce
🌻 Sunflower seeds
⚪ Sesame seeds
🍬 Pickled ginger
Instructions
1- Prep the Veggies:
- Begin by chopping the broccoli, zucchini, Brussels sprouts, jalapeño, green onion, red bell pepper, and radishes into small, bite-sized pieces. Aim for some texture, as we want the vegetables to remain crispy.
2- Make the Batter:
- In a large mixing bowl, combine 2 cups of all-purpose flour with 2 cups of room-temperature water. Stir until smooth. Add a splash of cooking oil and a small drizzle of sesame oil for flavor.
3- Mix in the Veggies:
- Gently fold the chopped vegetables into the batter, ensuring they are evenly coated.
4- Cook the Pancake:
- Preheat a large non-stick pan over medium heat. Lightly coat the surface of the pan with a bit of cooking oil. Pour in the vegetable-batter mixture, spreading it evenly across the pan. Sprinkle with salt and black pepper to taste.
5- Flip for Crispiness:
- Allow the pancake to cook for about 5-7 minutes on each side or until golden brown and crispy.
6- Slice and Serve:
- Once cooked, transfer the pancake to a cutting board and cut it into four equal parts.
7- Top It Off:
- Drizzle the pancake with Kewpie mayonnaise and Okonomi sauce. Garnish with a sprinkle of sunflower seeds, sesame seeds, and add a touch of pickled ginger on the side for a zesty kick.
