Celebrate Pride Month with a joyful twist on a beloved Mexican dessert, the Carlota de Limón. This vibrant and creamy treat combines the classic flavors of lime and Maria cookies with a colorful rainbow presentation, making it a perfect dessert to spread love and happiness.

Ingredients

🥛 2 cans of media crema (7.6 oz each)
🥫 1 can of condensed milk
🧀 2 bars of cream cheese (8 oz each)
🍪 2 packs of Marias cookies (4.9 oz each)
🍈 2 tbsp lime juice (about one large lime)
🌈 Food colorant (red, orange, yellow, green, blue, and purple)


Instructions

1- Prepare the Base Mixture:

  • In a blender, combine the media crema, condensed milk, cream cheese, and lime juice.
  • Blend until smooth and free of any cream cheese lumps.

2- Divide and Color:

  • Divide the blended mixture evenly into six small bowls or containers.
  • Using food colorants, color each portion with one of the following colors: red, orange, yellow, green, blue, and purple.

3- Prepare the Mold:

  • For a 10-inch silicon mold, simply grease it lightly. If using a metal or glass pan, line the inside with plastic wrap, smoothing out as many wrinkles as possible.

4- Layer the Dessert:

  • Begin by pouring the purple mixture into the mold and spread it evenly.
  • Add a layer of Marias cookies, breaking some into pieces to fill any gaps.
  • Carefully pour the blue mixture over the cookies, followed by another layer of cookies.
  • Repeat this process with the green, yellow, orange, and finish with the red layer on top, each followed by cookies.

5- Wrap and Freeze:

  • Cover the top layer of cookies with plastic wrap and seal tightly.
  • Place the mold in the freezer for a minimum of 4 hours, but preferably overnight, to allow the dessert to set.

6- Serve:

  • Once set, carefully transfer the Carlota from the mold to a serving tray.
  • Cut into slices or pieces and enjoy immediately, as it will melt like ice cream.
