Experience an authentic taste of Mexico with these delightful Carne Asada Fried Quesadillas. These are not your typical quesadillas; they're deep-fried, made with fresh masa, and packed with cheesy goodness and the flavors of well-marinated carne asada. Perfect for a hearty meal or a flavorful snack!

Ingredients:

For the Salsa:
🍅 5 tomatillos
🌶️ 8 serrano peppers
🧅 A small piece of onion
🧄 2 garlic cloves
💧 1 cup of water
🧂 Salt to taste

For the Carne Asada:
🥩 1 lb. of skirt steak
🍋 1 lime (juice)
🫒 ¼ cup of olive oil
🌶️ 1 tsp of chili pepper flakes
🧂 1 tsp of salt
⚫ 1 tsp of black pepper

For the Quesadillas:
🌽 1 cup of instant corn masa mix
🧂 ¼ tsp of salt
💧 1.5 cups of water
🧀 2 cups of shredded Chihuahua or Oaxaca cheese

For Toppings:
🥬 Shredded lettuce
🍅 Diced tomato
🥛 Mexican crema


Instructions:

  1. Prepare the Carne Asada:
    • Season and marinate the skirt steak with lime juice, olive oil, chili pepper flakes, salt, and black pepper. Allow it to marinate for at least 30 minutes in the refrigerator.
  2. Make the Salsa:
    • In a skillet on high heat with a little oil, sauté the tomatillos and serrano peppers for about 4 minutes.
    • Add the onion and garlic, sautéing for a few more minutes until fragrant.
    • Pour in 1 cup of water and let the mixture cook until slightly reduced.
    • Transfer everything to a blender, season with salt, and blend until smooth. Set aside.
  3. Cook the Carne Asada:
    • Sear the marinated skirt steak in a hot skillet, ensuring it stays juicy. Avoid overcooking.
    • Once cooked, chop the steak into small pieces and keep it warm.
  4. Prepare the Masa Dough:
    • In a bowl, combine the masa mix, salt, and water. Mix to form a slightly sticky dough. Adjust with water if necessary, 1 teaspoon at a time.
    • Divide the dough into 5-6 balls, based on your preferred quesadilla size.
    • Using a tortilla press or two flat items like plates or cutting boards, press each masa ball between two pieces of plastic or parchment paper, ensuring they're not too thin or thick.
  5. Assemble the Quesadillas:
    • Place cheese in the center of each pressed masa circle, then fold it like a taco, bringing together the edges and pressing to seal.
  6. Fry the Quesadillas:
    • Fry in hot oil until golden brown. Remove and drain on paper towels.
  7. Serve:
    • Gently cut each fried quesadilla open and fill with chopped carne asada, salsa, lettuce, diced tomato, and Mexican crema.
