Ingredients:
For the Chicken Kabobs:

- 🍋 Juice of 1 lemon

- 🫒 ½ cup of olive oil
- 🧄 1 tbsp of garlic powder
- 🧅 1 tbsp of onion powder
- 🧂 Salt and black pepper, to taste
- 🧅 ½ white or red onion
- ⛓️ 6 skewers
For the Pico Salad:
- 🧅 1 small red onion
- 🍅 1 Roma tomato
- 🥒 2 small English cucumbers
- 🌶️ 2 jalapenos
- 🌿 ¼ cup of chopped cilantro
- 🌿 ¼ cup of chopped mint
- 🍋 Juice of 2 limes
- 🧄 2 garlic cloves
- 🧂 Salt to taste
To Serve:
- 🌽 Corn tortillas
- 🥛 Sour cream
Instructions:
- Prep the Chicken:
- Cut the chicken thighs into bite-sized chunks.
- In a blender, combine the lemon juice, chipotle chiles, zaatar, olive oil, garlic powder, and onion powder. Blend until smooth to form the marinade.
- Season the chicken thigh pieces with salt and black pepper. Add the marinade, ensuring all the chicken pieces are well-coated. Marinate for at least 1 hour in the refrigerator.
- Skewer the Chicken:
- Thread the marinated chicken pieces onto the skewers, adding slices of onion between pieces for added flavor.
- Cook the Chicken:
- Place the skewers on a baking sheet lined with foil.
- Broil on high for about 15 minutes per side, ensuring the chicken is cooked through and slightly charred.
- Prepare the Pico Salad:
- Dice the red onion, Roma tomato, and English cucumbers into small pieces.
