  • 🥩 2 lb of beef sweetbreads
  • 🍈 4 limes
  • 🍊 1 orange
  • 🧅 1/2 onion, thinly sliced
  • 🌿 1 packet of Sazón (cilantro y achiote)
  • 🌶️ 2 tbsp of paprika
  • 🧄 4 garlic cloves, minced
  • 🧂 Salt
  • 🌶️ Black pepper
  • 🧈 4 tbsp of beef tallow

Instructions:

  1. Prepare the Sweetbreads:
    Cut the sweetbreads into small to medium-sized pieces, following the natural divisions. Place them in a large bowl.
  2. Marinate:
    Squeeze the juice from the limes and orange over the sweetbreads. Add the Sazón packet, paprika, minced garlic, thinly sliced onion, salt, and black pepper. Mix thoroughly to ensure the sweetbreads are well covered with the marinade. Push the sweetbreads down into the marinade to submerge them as much as possible.
  3. Refrigerate:
    Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, or ideally overnight for the best flavor infusion.
  4. Cook the Sweetbreads:
    In a skillet, heat the beef tallow over medium-low heat. Add the sweetbreads, searing them on both sides to achieve a slightly charred exterior.
  5. Reduce the Marinade:
    Add the remaining marinade along with the onions into the skillet. Cook on low heat, stirring occasionally, until the liquid reduces and the onions caramelize.
  6. Assemble Tacos:
    Slice the cooked sweetbreads and serve them in warm corn tortillas. Top with caramelized onions, additional fresh onions, cilantro, and spicy salsa for a burst of flavor.
