Ingredients
For the Dip:
- 🧀 1 cream cheese bar (8 oz)
- 🌿 1/2 cup fresh cilantro
- 🌶️ 1 jalapeño
- 🧄 3-4 garlic cloves
- 🫒 10 manzanillo olives
- 🫒 1 cup olive oil
- 🧂 Salt to taste
- 🧂 Black pepper to taste
For the Tostones: - 🍌 Plantains (green or nearly ripe)
- 🧂 Salt to taste
- 🫒 Cooking oil for frying
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes
Servings: 4-6
Equipment Needed:
- Frying pan or skillet
- Tostones press or tortilladora (optional)
- Blender
Instructions
- Prepare the Plantains:
- Peel the plantains and cut them into 1-inch thick pieces.
- Heat the cooking oil in a frying pan over medium heat.
- Fry the plantain pieces until they turn golden brown. Remove them from the oil and place on paper towels to drain.
- Press the Plantains:
- Using a tostones press or the bottom of a skillet (or even a plate), press each fried plantain piece to flatten it. The thickness is a personal preference: thinner for crunchiness or slightly thicker for softness.
- Fry Again:
- Return the pressed plantains to the hot oil. Fry until they are crispy. Once done, strain the oil and place the tostones on paper towels to drain. Season them with salt.
- Make the Dip:
- In a blender, combine olive oil and cream cheese first to facilitate blending.
- Add cilantro, jalapeño, garlic cloves, and manzanillo olives.
- Season with salt and black pepper.
- Blend until smooth, pausing to mix with a spoon if necessary to prevent sticking. If the dip is too thick, gradually add more olive oil until the desired consistency is achieved.
- Serve:
- Plate the crispy tostones alongside the creamy cilantro jalapeño dip. This dip also works wonderfully as a sandwich spread.
Cooking Tips:
- For a milder dip, remove the seeds from the jalapeño before blending.
- For best results, use green plantains as they are firmer and will hold up better when fried.
