  • 🍷 Red wine
  • 🧂 Kosher salt
  • ⚫ Black pepper
  • 🍳 Cooking oil
  • 🥔 Truffle and dill potato cake (prepare separately)

Instructions:

  1. Prepare the Sauce:
    • In a saucepan, add the serrano pepper, blackberries, the juice of half a lemon, water (just enough to cover the blackberries), and the garlic clove.
    • Bring the mixture to a boil, allowing the flavors to meld together.
  2. Blend and Strain:
    • Once the blackberry mixture is boiled, transfer it to a blender. Blend until smooth.
    • Strain the blended mixture to remove seeds and achieve a silky puree.
  3. Cook the Filet Mignon:
    • Season the petite filet mignon generously with kosher salt and black pepper.
    • In a skillet, heat a little cooking oil over medium-high heat.
    • Sear the filet mignon on both sides until a golden-brown crust forms (approx. 3-4 minutes per side for medium-rare, depending on thickness).
  4. Create the Sauce:
    • In the same skillet, add a splash of red wine and let it boil, deglazing the pan and reducing slightly.
    • Add the blackberry puree to the skillet. Keep the heat high and stir continuously until the sauce thickens.
