For the Coleslaw:

  • ๐Ÿฅฌ 1 cup shredded green cabbage

    For Pickling:

    For the Pork Chops:

Instructions:

  1. Preparing the Pickling Liquid:
    • In a pot, combine 1.5 cups of water and 1.5 cups of apple cider vinegar.
    • Add 2 garlic cloves, 2 small green apples (seeds removed), 1 teaspoon dill weed, 1 tablespoon yellow mustard seeds, and 1/3 cup sugar.
    • Bring the mixture to a boil, then reduce the heat. Let it simmer for a few minutes to bring out the flavors.
  2. Preparing the Coleslaw:
    • In a large bowl, combine shredded pear, mini cucumbers, red and green cabbage, chopped cilantro, and pickled red onions.
    • Stir in 1 tablespoon of mayo and season with salt to taste. Toss the ingredients until well-combined and set aside.
  3. Cooking the Pork Chops:
    • Season the pork chops generously with kosher salt and peppercorn on both sides.
    • Heat a pan until it is very hot. Sear the pork chops until nicely browned on each side, including the layer of fat on the side, for extra flavor.
