Ingredients:
For the Coleslaw:
- 🍐 1 pear (shredded)
- 🥒 2 mini cucumbers (shredded)
- 🥬 1 cup shredded red cabbage
- 🥬 1 cup shredded green cabbage
- 🌿 1/4 cup chopped cilantro
- 🧅 1/2 cup pickled red onions
- 🥄 1 tablespoon mayo
- 🧂 Salt to taste
For Pickling:
- 🧄 2 garlic cloves
- 🍏 2 small green apples (seeds removed)
- 💧 1.5 cups water
- 🍏 1.5 cups apple cider vinegar
- 🌿 1 teaspoon dill weed
- 🌿 1 tablespoon yellow mustard seeds
- 🍬 1/3 cup sugar
For the Pork Chops:
- 🥩 4 pork chops
- 🧂 Kosher salt
- 🌶️ Generous peppercorn
Instructions:
- Preparing the Pickling Liquid:
- In a pot, combine 1.5 cups of water and 1.5 cups of apple cider vinegar.
- Add 2 garlic cloves, 2 small green apples (seeds removed), 1 teaspoon dill weed, 1 tablespoon yellow mustard seeds, and 1/3 cup sugar.
- Bring the mixture to a boil, then reduce the heat. Let it simmer for a few minutes to bring out the flavors.
- Preparing the Coleslaw:
- In a large bowl, combine shredded pear, mini cucumbers, red and green cabbage, chopped cilantro, and pickled red onions.
- Stir in 1 tablespoon of mayo and season with salt to taste. Toss the ingredients until well-combined and set aside.
- Cooking the Pork Chops:
- Season the pork chops generously with kosher salt and peppercorn on both sides.
- Heat a pan until it is very hot. Sear the pork chops until nicely browned on each side, including the layer of fat on the side, for extra flavor.
- Once seared, place the pork chops in the pickling liquid for about two minutes to infuse the flavors.
- Serving:
