Ingredients

🥕 3 red beets
🌕 2 golden beets
🍈 1 lb frozen lima beans
🌽 1 can white corn, drained
🍋 1 lime, zest and juice
🍊 1 orange, juice and zest
🧄 2 garlic cloves, minced
🍶 3/4 cup of Mezcal
🥑 1/4 cup of avocado oil
🧂 Salt
🧂 Black pepper


Instructions

1- Preparation:

  • Rub your hands and nails with cooking oil to prevent stains from the red beets. Peel the red beets and dice them into small cubes. Set them aside in a separate bowl to prevent staining the other vegetables.
  • Peel and dice the golden beets. Place them in a large mixing bowl.
  • Add the frozen lima beans and the drained white corn to the bowl with the golden beets.

2- Marinade:

  • In a separate bowl, combine the zest and juice of both the lime and the orange.
  • Add the minced garlic, mezcal, and avocado oil. Mix well to combine.

3- Seasoning:

  • Sprinkle salt and black pepper over the golden beet mixture.
  • Pour the citrus and mezcal marinade over the vegetables. Toss until everything is well-coated.

4- Cooking:

  • Preheat your oven to 400°F (200°C).
  • Place the red beets on a separate baking sheet to avoid color bleeding.
  • Distribute the golden beet mixture evenly on another baking sheet.
  • Roast both sheets in the oven for 25 minutes, or until the marinade has mostly dried and the vegetables are tender.

5- Serving:

  • Once cooked, mix the red beets with the golden beet mixture.
  • Transfer to a serving dish and enjoy this vibrant side dish.
