Ingredients for Sopita Aguada:
- 🧄 2 garlic cloves
- 🧅 1/4 of an onion
- 🍅 2 roma tomatoes
- 🍜 1 pack of fideo (vermicelli noodles)
- 🥄 3 tbsp of cooking oil
- 🧂 Salt to taste
- 🌶️ 1 tbsp of tomato and chicken bouillon
- 💧 10 to 12 cups of water
Ingredients for Taquitos Dorados:
- 🥩 Ground meat of your choice
- 🧅 1/4 onion, thinly sliced
- 🧄 Minced garlic cloves
- 🌿 Salt and black pepper to taste
- 🌿 Cumin
- 🌮 Corn tortillas
- 🍵 Oil for frying
Avocado Salsa Ingredients:
- 🍅 4 tomatillos
- 🌶️ 2 jalapeños
- 🧅 1/4 onion
- 🧄 1 garlic clove
- 🥑 1 avocado
- 🌿 Cilantro
- 🧂 Salt to taste
Preparation:
Sopita Aguada:
- In a large pot, heat 3 tablespoons of cooking oil over medium heat.
- Add the noodles and stir until they are golden brown.
- Blend tomatoes, garlic, and onion until smooth. Pour this mixture into the pot with the noodles and cook for about 5 minutes.
- Add 10 to 12 cups of water and the bouillon. Stir to combine.
- Bring to a boil, reduce the heat, and let it simmer for 10-15 minutes until the noodles are tender.
- Season with salt to taste before serving.
Taquitos Dorados:
- In a pan over medium heat, brown the ground meat, breaking it up as it cooks. Add the sliced onion, minced garlic, salt, black pepper, and cumin, stirring until fragrant.
- Move the meat to one side and allow the grease to collect on the other side.
- Coat the tortillas in the grease, then fry on a griddle until they are golden but still pliable.
- Fill the tortillas with the meat mixture and fold them before they become too crispy.
Avocado Salsa:
- Boil the tomatillos, jalapeños, onion, and garlic for 10 minutes.
- Blend these with an avocado, cilantro, and salt until smooth.
Serving:
- Serve the Sopita Aguada in bowls alongside the Taquitos Dorados, garnished with the avocado salsa, cream, lettuce, and tomato.
- Include lime wedges for an extra zest of flavor.
