Instructions
1. In a large pot, heat the cooking oil over medium heat. Add the fideo and toast until golden brown. Blend the Roma tomatoes, garlic, and onion until smooth. Add the mixture to the pot, stir, then add water, tomato and chicken bouillon, and salt. Bring to a boil, reduce heat, and simmer for 10-15 minutes.
2. Heat oil in a pan over medium heat. Cook the ground meat, breaking it up, and add onion, garlic, salt, black pepper, and cumin. Push the meat to one side to let the grease pool. Dip tortillas into the grease and lightly fry on a griddle, folding before they become too crispy.
3. Boil tomatillos, jalapeños, onion, and garlic for 10 minutes. Blend with avocado, cilantro, and salt until smooth.
4. Fill the tortillas with the meat, roll tightly, and drizzle with the salsa. Top with lettuce, tomato, and crema. Serve alongside lime wedges.
