Caldo de Pollo (Mexican Chicken Soup)

Ingredients
🍗 2 chicken quarter legs
🧂 1 tbsp of salt
🧂 2 tbsp of chicken bouillon
🧄 3 garlic cloves, minced
🌶️ 1 jalapeño
🌿 3-5 stems of cilantro
🧅 1/2 onion, diced
🥔 2 potatoes
🥕 2 carrots
🥒 2 zucchini squash
Instructions
1- Prepare the Chicken Broth
- Place the chicken, salt, chicken bouillon, minced garlic, cilantro, and jalapeño in a large pot. Cover the ingredients with water and place the pot over medium heat. Cover with a lid and let it cook for about 20 minutes.
2- Skim the Broth
- As the soup cooks, periodically remove any foam or impurities that rise to the surface to ensure a clean and clear broth.
3- Remove Aromatics
- After 20 minutes, carefully remove the cilantro from the pot. Depending on your spice preference, you can also remove the jalapeño or leave it for an added kick.
4- Add the Vegetables
- Add the diced onion, potatoes, and carrots to the pot. Cover with the lid and continue cooking for another 10 minutes.
5- Add Zucchini and Final Touches
- After 10 minutes, add the zucchini to the pot. Cover again and let it cook for an additional 5 minutes.
6- Serve
- Once all the vegetables are tender and the chicken is cooked through, your soup is ready to serve. Pair it with warm corn tortillas and a squeeze of fresh lime for an authentic experience.
