Instructions
1. Prepare the Marinade
o In a large mixing bowl, combine achiote paste, orange juice, lime juice, minced garlic, ground cumin, dried oregano, salt, and black pepper.
o Mix until a smooth marinade forms.
2. Marinate the Jackfruit
o Add the drained and rinsed jackfruit to the marinade, ensuring all pieces are well coated.
o Cover and refrigerate for at least 1 hour to allow flavors to meld.
3. Preheat the Oven
o Preheat your oven to 350°F (175°C).
4. Assemble for Baking
o In a baking dish or Dutch oven, heat vegetable oil over medium heat.
o Add the thinly sliced red onion and sauté until translucent, about 5 minutes.
o Add the marinated jackfruit along with all the marinade to the dish.
o Stir to combine with the onions.
5. Bake
o Cover the dish with aluminum foil or a lid.
o Bake in the preheated oven for 1 hour, until the jackfruit is tender and has absorbed the flavors.
6. Shred the Jackfruit
o Remove the dish from the oven and let it cool slightly.
o Using forks, shred the jackfruit to resemble pulled meat.
o Mix well with the sauce in the dish.
7. Serve
o Serve the jackfruit pibil on warm corn tortillas.
o Garnish with chopped fresh cilantro and a squeeze of lime juice.
