Jackfruit Pibil
Jackfruit Pibil is a delightful vegan twist on a traditional Mexican dish typically made with pork. This recipe harnesses the versatility of jackfruit, which absorbs the rich, smoky flavors of the spices and peppers to create a satisfying and flavorful meal. Ingredients:
🌳 1.5 lb jackfruit
🌶️ 4 guajillo peppers (stemless and seedless)
🌶️ 1 ancho pepper (stemless and seedless)
🧂 ½ tsp peppercorn
🌿 ¼ tsp cumin seeds
🍂 2 cloves
🍃 2 bay leaves
🧅 ¼ onion
🧄 2 garlic cloves
🧂 1 tsp salt
🛢️ Cooking oil
🥄 2 tsp chicken bouillon
🧂 Salt and black pepper to taste
Instructions:
- Prepare the Jackfruit:
- Extract the fruit from the jackfruit, separating it from the skin and fibrous parts. Remove the seeds and place the fruit in a bowl. Rinse thoroughly.
- Cook the Base:
- In a pot, combine the jackfruit, guajillo and ancho peppers, and spices (wrapped in a spice cloth or similar).
- Add the onion, garlic, 1 tsp of salt, and enough water to cover all ingredients.
- Cover with a lid and cook on high heat for 15 minutes.
- Shred the Jackfruit:
- Remove the jackfruit from the pot, place it in a bowl, and shred it using your fingers by pulling apart each piece.
- Blend the Sauce:
- Remove the spices from the pot, and pour about 2 cups of the cooking liquid into a blender along with the peppers, onion, and garlic. Blend until smooth.
- Cook the Jackfruit:
- In a skillet over medium heat, add cooking oil. Once heated, add the shredded jackfruit and sauté for about two minutes.
- Gradually add the blended sauce and chicken bouillon. Use just enough sauce to coat the jackfruit without making it too soupy.
- Cook until the mixture thickens slightly and the sauce has reduced. Season with additional salt and black pepper to taste.
