Ingredients
🥓 3 strips of bacon
🌭 4 pieces of sausage
🥞 1 cup of pancake mix
🥚 6 eggs
🍁 Maple syrup (to taste)
Instructions
1- Cook the Meats:
- Begin by cooking the 3 strips of bacon in a skillet over medium heat until crispy. Remove and set aside.
- Follow by cooking the 4 pieces of sausage in the same skillet. Once cooked, set aside with the bacon.
- Reserve the grease left in the skillet for later use.
2- Prepare the Pancake Mix:
- Follow the package instructions to prepare 1 cup of pancake mix.
- Chop the cooked bacon and sausage into small pieces and mix into the prepared pancake batter.
3- Grease the Baking Pan:
- Take a cupcake baking pan and use a napkin dipped in the reserved bacon and sausage grease to thoroughly grease each cupcake section. This will add flavor and prevent sticking.
4- Assemble the Muffins:
- Divide the pancake batter evenly into the prepared cupcake sections. Ensure that some meat is in every muffin.
5- Bake the Muffins:
- Preheat your oven to 350°F (175°C).
- Bake the muffins in the preheated oven for about 10 minutes or until the tops are golden and the muffins are cooked through.
6- Prepare the Eggs:
- While the muffins are baking, decide if you prefer your eggs hard or soft-cooked. Cook 6 eggs to your liking in a separate pan.
7- Final Assembly:
- Once the muffins are baked, slice each one horizontally.
- Place a cooked egg on each muffin bottom, then top with the muffin top.
