Taro & Beef Stir Fry

Ingredients:
🧄 1 lb. taro root
🥩 1 lb. Beef chuck
🫑 1 green bell pepper
🧅 ½ red onion
🧄 3 minced garlic cloves
🧂 Salt and black pepper to taste
🌿 2 tsp of ginger powder
🌽 ¼ cup of corn starch
🌶️ Chili pepper flakes (to taste)
🥜 Peanut oil for frying
Instructions:
- Prepare the Taro:
- Peel and dice the taro root into bite-sized pieces.
- Season the taro with salt and black pepper.
- Add half of the corn starch to the taro and toss well to ensure even coating.
- Deep fry the taro in peanut oil until golden and crispy, about 5 minutes. It should be crispier and cook quicker than potatoes. Remove and set aside.
- Prepare the Beef:
- Dice the beef chuck into small pieces.
- Season the beef with salt, black pepper, and ginger powder.
- Add the remaining corn starch to the beef, toss to coat, and fry for about 5 minutes until browned. Set aside.
- Stir Fry Vegetables:
- In a pan, add a little peanut oil and heat.
- Add diced red onion and green bell pepper, sautéing for about 3 minutes while stirring constantly until they start to soften.
- Combine Ingredients:
- Add minced garlic to the pan and stir quickly to avoid burning.
- Return the fried taro and beef to the pan, stirring to combine with the vegetables.
- Add chili pepper flakes to your taste preference for spiciness.
- Finish & Serve:
- Cook everything together for another 2-3 minutes, ensuring all flavors meld together beautifully.
- Serve hot, garnished with additional chili flakes or fresh herbs if desired.
