Quesadillas are a staple in Mexican cuisine, offering a delightful combination of crispy tortillas and melted cheese. This recipe adds a unique twist with blue corn tortillas and a zesty flank steak filling, creating a fusion of traditional flavors with a modern touch.

Ingredients

For the Steak:
🥩 1 flank steak
🍋 Juice of 1 lime
🧂 1 teaspoon kosher salt
🌿 1 teaspoon Mexican oregano
🌶️ 1 teaspoon paprika
⚫ 1 teaspoon black pepper
🧄 1 clove garlic, chopped
🛢️ 1 tablespoon cooking oil
For the Quesadillas:
🌽 2 cups blue corn flour
💧 1 1/4 cups water
🧂 A pinch of salt
🧀 1 cup mozzarella cheese, shredded
🧅 Pickled onions, for topping
🌺 Pickled radishes, for topping
🌮 Tortillas


Instructions

  1. Prepare the Tortilla Dough:
    • In a large bowl, combine the blue corn flour and a pinch of salt.
    • Gradually add 1 1/4 cups of water, mixing with your hands until you form a smooth dough. If the mixture is too dry, add more water little by little until desired consistency is achieved.
    • Let the dough rest for about 10 minutes while you prepare the steak.
  2. Marinate the Steak:
    • In a shallow dish, combine lime juice, kosher salt, Mexican oregano, paprika, black pepper, chopped garlic, and cooking oil.
    • Coat the flank steak with this mixture, ensuring it is evenly covered. Let marinate for at least 15 minutes for enhanced flavor.
  3. Cook the Steak:
    • Heat a grill or skillet over medium-high heat. Cook the marinated steak for about 4-5 minutes on each side, or until it reaches your desired level of doneness.
    • Remove from heat and let it rest for 5 minutes before slicing it thinly against the grain.
  4. Make the Tortillas:
    • Divide the blue corn dough into equal-sized balls (approximately 8-10, depending on your preferred size).
    • Flatten each ball between two sheets of parchment paper using a tortilla press or rolling pin to form round tortillas.
    • Cook the tortillas on a hot skillet for about 1-2 minutes on each side or until they are lightly charred and cooked through.
  5. Assemble the Quesadillas:
    • Place a tortilla on the skillet, sprinkle some mozzarella cheese on half of the tortilla, add slices of cooked steak, pickled onions, and pickled radishes.
    • Fold the tortilla over the filling and cook until the cheese is melted and the tortilla is lightly browned and crispy.

Cooking Tips

  • Make sure to slice the steak thinly to avoid overly chewy pieces.
  • If blue corn flour is unavailable, regular masa harina can be used as a substitute.
