Instructions
- Prepare the Tortilla Dough:
- In a large bowl, combine the blue corn flour and a pinch of salt.

- Let the dough rest for about 10 minutes while you prepare the steak.
- Marinate the Steak:
- In a shallow dish, combine lime juice, kosher salt, Mexican oregano, paprika, black pepper, chopped garlic, and cooking oil.
- Coat the flank steak with this mixture, ensuring it is evenly covered. Let marinate for at least 15 minutes for enhanced flavor.
- Cook the Steak:
- Heat a grill or skillet over medium-high heat. Cook the marinated steak for about 4-5 minutes on each side, or until it reaches your desired level of doneness.
- Remove from heat and let it rest for 5 minutes before slicing it thinly against the grain.
- Make the Tortillas:
- Divide the blue corn dough into equal-sized balls (approximately 8-10, depending on your preferred size).
- Flatten each ball between two sheets of parchment paper using a tortilla press or rolling pin to form round tortillas.
- Cook the tortillas on a hot skillet for about 1-2 minutes on each side or until they are lightly charred and cooked through.
- Assemble the Quesadillas:
- Place a tortilla on the skillet, sprinkle some mozzarella cheese on half of the tortilla, add slices of cooked steak, pickled onions, and pickled radishes.
