Pozole Verde

Pozole Verde is a traditional Mexican dish bursting with rich flavors and vibrant green tones. Perfect for a cozy gathering, this hearty soup combines pork shoulder with a zesty blend of peppers and herbs, topped with crisp, fresh garnishes.

Ingredients

🐖 4 lb pork shoulder, cut into big chunks
🧂 Salt to taste
🧅 1/2 onion, sliced
🧄 1 whole head of garlic
🌿 4 bay leaves
🌿 1/4 teaspoon cumin
🌿 1/4 teaspoon oregano
🌶️ 4 poblano peppers, seeds and stems removed
🌶️ 3 jalapeños, seeds intact, stems removed
🌿 Fresh cilantro, a small bunch
🍅 6 tomatillos
🌽 Hominy, amount to taste
🥬 Shredded cabbage or lettuce, for topping
🌿 Radishes, sliced, for topping
🍋 Lime wedges, for serving


Instructions

1- Prep and Cook the Pork

  • In a large pot, add pork shoulder chunks. Cover with water (about a quarter of the pot) and add sliced onion, whole garlic head, bay leaves, cumin, oregano, and salt to taste. Bring to a boil. Cook for 15 minutes until the flavors meld.

2- Prepare the Green Sauce

  • While the pork is cooking, blend the poblano peppers, jalapeños, fresh cilantro, and tomatillos until smooth.

3- Combine Ingredients

  • Remove the pork from the pot, drain the cooking liquid, and rinse the pork a few times to remove excess fat and impurities. Pour the blended green mixture into a bowl, and scoop out the solid parts, leaving the liquid at the bottom.

4- Simmer Together

  • Return the pork back to the pot and add the scooped green mixture. Simmer for another 15 minutes.

5- Add Hominy

  • Stir in the desired amount of hominy, allowing it to heat through. You can adjust the amount based on personal preference.

6- Serve

  • Ladle the Pozole Verde into bowls and top with shredded cabbage, sliced radishes, and a splash of lime juice to taste. Enjoy with lime wedges on the side.
