Ingredients
🐷 5-6 cups pork cracklings
🥚 8 eggs
🧅 1/2 onion, thinly sliced
🍅 2 Roma tomatoes
🧅 1/4 onion
🌶️ 3 red jalapeños
🧄 2 garlic cloves
🛢️ 3 tablespoons cooking oil
Instructions
1- Prepare the Salsa Roja:
- Place the 1/4 onion, Roma tomatoes, red jalapeños, and garlic cloves in a microwave-safe zip bag with about 1/4 cup of water. Microwave for 3 minutes.
- Transfer the microwaved ingredients to a blender. Add salt to taste and blend until smooth. Alternatively, boil these ingredients for 15 minutes or until the vegetables are tender before blending.
2- Cook the Onions:
- In a skillet, heat the cooking oil over medium heat. Add the sliced 1/2 onion and cook until translucent.
3- Combine with Salsa and Cracklings:
- Pour approximately 2 cups of the prepared Salsa Roja into the skillet with the onions. Stir to combine.
- Add the pork cracklings to the skillet. If the salsa is too thick, add a bit of water to ensure all cracklings are well coated. If too runny, allow the mixture to cook down and the water to evaporate.
4- Add the Eggs:
- In a separate bowl, whisk the eggs. Pour the eggs into the skillet with the chicharrón-salsa mixture.
- Cook the eggs to your desired level of doneness, gently stirring to incorporate them with the chicharrón.
5- Serve:
- Serve the chicharrón con huevo in warm tacos or gorditas for an authentic experience.
