Chipotle Alfredo Spaghetti Squash

Ingredients
🎃 1 spaghetti squash, seasoned with olive oil and kosher salt
🍶 1 jar of Alfredo sauce (1lb)
🧄 2 teaspoons garlic powder
🌶️ 1 teaspoon coarse black pepper
🌶️ 2 chipotles (or more if you want it spicier) from a can
🥛 1/2 cup heavy cream
🍗 2 cups rotisserie chicken, shredded
🧀 Parmesan cheese, to taste
Instructions
1- Prepare the Spaghetti Squash:
- Preheat your oven to 375°F (190°C).
- Cut the spaghetti squash in half and scoop out the seeds using a spoon.
- Brush the insides of the squash with olive oil and sprinkle with kosher salt.
- Place the squash halves cut-side down on a baking sheet.
- Roast in the oven for 25 minutes. Once done, let it rest until it cools slightly.
- Using a fork, scrape the inside of the squash to create spaghetti-like strands and set aside.
2- Make the Chipotle Alfredo Sauce:
- In a blender, combine the jar of Alfredo sauce, garlic powder, coarse black pepper, chipotles, and heavy cream.
- Blend until smooth.
3- Assemble the Dish:
- In a mixing bowl, combine the shredded rotisserie chicken with the prepared chipotle alfredo sauce.
- Mix well to ensure the chicken is fully coated with the sauce.
4- Bake:
- Preheat your oven to 385°F (196°C).
- Spread the sauced chicken mixture over the spaghetti squash strands.
- Sprinkle generously with Parmesan cheese on top.
- Bake in the oven for 15 minutes until everything is heated through and the cheese is melted.
5- Serve and Enjoy:
- Let the dish cool slightly before serving.
