Ingredients:
🥩 2 lbs boneless short rib
🧄 1 minced garlic clove
🧅 1/4 cup chopped onion
🌶️ 2 diced jalapeños
🍅 2 diced Roma tomatoes
🌿 1/4 cup chopped cilantro
🥣 1 1/2 cup beef stock
🧂 Salt and black pepper to taste

Instructions:
- Prepare the Short Rib:
Begin by slicing the boneless short rib thinly. Slice against the grain (crossways rather than lengthways) to ensure tenderness. - Heat the Oil:
In a wok or a large pan, heat a small amount of cooking oil over medium-high heat. - Cook the Short Rib:
Add the sliced short rib to the hot oil and sear until it is browned on all sides. - Add Flavors:
Stir in the minced garlic clove and chopped onion. Cook until the onion becomes translucent. - Incorporate Vegetables:
Add the diced jalapeños and Roma tomatoes to the pan. Stir well. - Simmer with Stock:
Pour in the beef stock and lower the heat to medium. Allow the mixture to simmer until the beef becomes tender and the flavors meld together, approximately 20-30 minutes. - Season:
Season with salt and black pepper to taste. - Finish with Cilantro:
