- 🥫 1 cup of Mexican crema
- 🥄 1 cup of mayonnaise
- 🐟 1 (12 oz) can of tuna in water (drained)
- 🧂 Salt and black pepper to taste

Instructions
- Pickling Preparation:
- In a large pot, combine 3 cups of water, 1/2 onion, celery sticks, garlic cloves, 1 tablespoon of peppercorns, 1 tablespoon of Mexican oregano, 2 bay leaves, and 2 cups of white vinegar.
- Bring the mixture to a boil, then reduce the heat to medium.
- Prepare the Jalapenos:
- Select 6 large jalapenos and cut a slit along one side. Remove the seeds and veins to desired spiciness.
- Add the jalapenos to the pot and let them cook on medium heat until they turn a dark shade. This should take about 10-15 minutes.
- Remove jalapenos from the pot and set aside.
- Make the Filling:
- In a mixing bowl, combine Mexican crema and mayonnaise in equal parts. Add a pinch of salt and black pepper to taste.
- Drain the tuna and add it to the mixture. Stir until well combined.
- Stuff the Jalapenos:
- Carefully stuff the cooked jalapenos with the tuna mixture.
- Drizzle with a little of the pickling liquid for extra flavor.
- Serve:
- Arrange the tuna-stuffed jalapenos on a serving platter.
- Garnish with a sprinkle of Mexican oregano if desired.
