Ingredients:
๐ฅ 1 pack of Hawaiian rolls
๐ง 1 cup shredded Oaxaca cheese
๐ง
1/2 onion, thinly sliced
๐ 1 cup of pineapple chunks
๐ซ Cooking oil
๐ถ๏ธ Salsa verde
๐ง
Diced onion
๐ฟ Fresh cilantro
๐ 3 pounds pork loin, sliced very thin
๐ฟ 2 teaspoons salt
๐ถ๏ธ 1/2 teaspoon black pepper
๐ง 1 teaspoon onion powder
๐ง 1 teaspoon garlic powder
๐ถ๏ธ 1 tablespoon chili powder
๐ถ๏ธ 1 tablespoon paprika
๐ฟ 1/2 teaspoon cumin
๐ฟ 1 teaspoon annatto powder or achiote
๐ 1/4 cup apple cider vinegar
๐ Fresh lime juice
Instructions:
- Marinate the Pork:
In a large bowl, combine the thinly sliced pork loin with salt, black pepper, onion powder, garlic powder, chili powder, paprika, cumin, annatto powder, and apple cider vinegar. Mix well to coat the pork evenly. Cover and let marinate in the refrigerator for at least 1 hour.
- Cook the Pork:
Heat a little bit of cooking oil in a skillet over medium-high heat. Add the marinated pork slices and cook until they are well-browned and fully cooked, about 5-7 minutes.
- Prepare the Filling:
In the same pan, add the thinly sliced onion and pineapple chunks. Cook until the onions are translucent and the pineapple is caramelized, about 3-4 minutes.
- Assemble the Sliders:
Slice the Hawaiian rolls in half and layer some of the cooked pork mixture on each bottom half. Top with shredded Oaxaca cheese.
- Melt the Cheese:
Preheat your oven to 'Low Broil'. Place the open-faced sliders in the oven just until the cheese is melted and bubbly, about 3-5 minutes.
- Garnish and Serve:
Remove the sliders from the oven and top with salsa verde, a squeeze of lime juice, some diced onion, and fresh cilantro. Serve immediately.
