Ingredients:
🌶️ 2 poblano peppers
🥔 3 potatoes (diced)
🧅 1/4 onion (chopped)
🧄 2 garlic cloves (minced)
🧂 Salt and black pepper to taste
🧈 3 tbsp butter
🌿 1/4 tsp cumin
🌿 1/4 tsp Mexican oregano
💧 Water to almost cover all the potatoes
🥛 1 cup heavy whipping cream
🧀 1 cup panela cheese (diced)
🐓 1 tsp chicken bouillon
Instructions:
1- Roast the Peppers:
- Turn on the stove to a high flame. Carefully place the two poblano peppers over the flame, letting the skin char until it's black on all sides.
- Once charred, place the peppers in a plastic bag, seal, and let them sweat for about 10 minutes. This helps loosen the skin for easy removal later.
2- Prepare the Potatoes:
- Heat a little bit of cooking oil in a pan over medium heat. Add the diced potatoes, chopped onion, and minced garlic.
- Season with salt to taste and sauté until the onions become translucent.
3- Add Butter and Spices:
- Add the butter to the pan, stirring until melted.
- Sprinkle in the black pepper, cumin, and Mexican oregano. Mix well to coat the potatoes with the spices.
4- Cook the Potatoes:
- Pour enough water into the pan to almost cover the potatoes.
- Simmer until the potatoes are tender yet firm, making sure they are not overcooked.
5- Handle the Roasted Peppers:
- Carefully peel the skin off the poblano peppers and remove the seeds.
- Cut the peppers into strips and add them to the pan with the potatoes.
6- Finish the Dish:
- Stir in the heavy whipping cream and chicken bouillon, mixing gently.
- Once heated through, add the diced panela cheese to the pan. Allow it to melt slightly.
- Stir everything together to ensure even distribution of the cream and cheese.
7- Serve:
