While it may not be the traditional mofongo you're used to, this unique take combines savory marinated beef with creamy, garlic-infused plantain mash for a hearty dish that is sure to impress.
Ingredients:
For Beef a la Criolla:
- 🥩 3 cups shredded beef
- 🧅 1 shallot
- 🧄 4 garlic cloves
- 🌶️ 1 red bell pepper
- 🫑 1 green bell pepper
- 🍊 1 orange bell pepper
- 🌿 1 cup cilantro
- 🍅 1 can diced tomatoes with juice
- 🌿 1 pack Goya seasoning (cilantro and achiote)

- 🛢️ Cooking oil
For Mofongo:
- 🍌 3 plantains
- 🧄 6 garlic cloves
- 🧅 Crispy fried onions
Instructions:
- Prepare the Aromatics:
- Mince the shallot and garlic cloves. Chop the red, green, and orange bell peppers into small pieces. Set aside.
- Cook the Beef:
- In a large skillet, heat the cooking oil over medium heat. Add the shallot and garlic, sautéing until fragrant.
- Add the bell peppers, and cook for about 2-3 minutes until they begin to soften.
- Stir in the shredded beef, canned tomatoes (including the juice), and the pack of Goya seasoning.
- Season with salt and black pepper to taste.
- Allow the mixture to simmer for about 10 minutes, or until the flavors meld together and the dish is heated through.
- Prepare the Plantains:
- Peel and cut the plantains into 1-inch pieces.
- Fry the plantain pieces in cooking oil over medium heat until golden brown and crispy on the outside.
- Mash the Mofongo:
- In a mortar and pestle, mash the fried plantains with 6 garlic cloves until well combined and slightly creamy.
- Mix in some crispy fried onions for added texture.
- Assemble the Dish:
- Shape the mashed plantains into a mound on a plate.
- Create a small well at the top of the mound and spoon the cooked Beef a la Criolla into the well.
- Garnish with additional crispy fried onions on top for a crunchy finish.
