Spicy Chimichurri Cauliflower Steak

- 🧄 4 garlic cloves

- 🌿 2 cups of fresh parsley (stemless)

- ⚫ 1 tsp of black pepper
- 🫒 1 cup of olive oil

Ingredients
🥦 1 Cauliflower
🧄 4 garlic cloves

🍋 1 lime (the juice)
🍷 1⁄4 cup of red cooking wine
🌿 2 cups of fresh cilantro
🌿 2 cups of fresh parsley (stemless)
🧂 1 tsp of salt
⚫ 1 tsp of black pepper
🫒 1 cup of olive oil
Instructions
Prepare the Cauliflower:
Clean the cauliflower head thoroughly and rinse it well.
Cut the cauliflower into 4 thick steaks and tap dry with paper towels.
Make the Chimichurri:
In a food processor or blender, combine garlic cloves, sweet green finger peppers, shallot, dried oregano, spicy chili pepper flakes, lime juice, red cooking wine, fresh cilantro, fresh parsley, salt, and black pepper.
Blend gently until herbs are combined but still visible as flakes or a coarse purée. Adjust the blending time depending on your texture preference.
Note: If you prefer a milder flavor, omit the chili pepper flakes. Green bell peppers can be used instead if sweet green finger peppers are unavailable.
Marinate the Cauliflower:
Place the cauliflower steaks into a ziplock bag.
Pour the chimichurri marinade over the steaks, ensuring they are well-coated.
Seal the bag and marinate in the refrigerator for at least 1 hour, or ideally overnight, to maximize flavor infusion.
Cook the Cauliflower Steaks:
Preheat a skillet over high heat.
Once hot, sear the marinated cauliflower steaks on both sides until the edges are slightly browned.
If you prefer a softer texture, reduce the heat to low and continue cooking until tender. For a crunchier texture, maintain high heat.
