Mexican Picadillo
Picadillo is a classic Mexican dish that boasts rich flavors and homey comfort. It's very versatile and can often be served with rice, tortillas, or even used as a filling for tacos or empanadas. Today we'll be making my personal take on Mexican Picadillo, incorporating a blend of spices, ground beef, and vegetables for a hearty, satisfying meal.
Ingredients:
🌰 1 tsp cumin seeds
🌶️ 1 tsp peppercorn
🌿 1 tsp Mexican oregano
🫒 Cooking oil
🥩 1 lb ground beef
🧅 1/2 cup diced onion
🧄 2 garlic cloves, minced
🧂 Salt to taste
🍅 4 tbsp tomato paste
🍲 2 cups chicken stock
🥔 1 cup small diced potato
🥕 1 cup small diced carrots
Instructions:
Begin by toasting 1 teaspoon each of cumin seeds and peppercorns in a dry skillet over medium heat until fragrant. This should take about 1-2 minutes.
Grind the toasted cumin seeds and peppercorns using a mortar and pestle or spice grinder. Then, mix in 1 teaspoon of Mexican oregano to combine with the freshly ground spices.
Heat cooking oil in a large skillet over medium-high heat. Add the 1 pound of ground beef and cook until it starts to brown.
Reduce the heat to medium and add 1/2 cup of diced onions, cooking until they become soft and translucent.
Stir in the minced garlic cloves, then season the mixture with salt to taste.
Add the 4 tablespoons of tomato paste to the beef, stirring to evenly incorporate.
Pour in 1 cup of chicken stock, followed by 1 cup of small diced potatoes and 1 cup of small diced carrots. Stir in the previously combined spices.
Add an additional cup of chicken stock or water to the skillet and bring the mixture to a simmer.
Cover the skillet and allow everything to cook on medium heat for about 10 minutes.
After 10 minutes, remove the cover and continue to cook on medium heat, letting the liquid reduce until the Picadillo reaches the desired consistency.

Cook Time: 30 minutes
Total Time: 50 minutes
Servings: Serves 4-6 people.
