Ingredients:

For the Dough:

  • 💧 1 cup of warm water
  • 🥄 1 tablespoon of active dry yeast
  • 🍬 1 tablespoon of sugar
  • 🌾 2.5 cups of all-purpose flour
  • 🧂 1 teaspoon of salt
  • 🫒 1 tablespoon of olive oil

For the Salsa Verde:

  • 🧄 3 garlic cloves
  • 🧅 ½ onion
  • 🌶️ 2 poblano peppers (no stem or seeds)
  • 🌶️ 4 jalapenos (stemless)
  • 🍅 8 tomatillos
  • 🧂 2 teaspoons of salt

Toppings:

  • 🧀 5 cups of shredded Chihuahua cheese
  • 🐖 4 cups of chicharrón (cut into small pieces)

Instructions:

  1. Prepare the Dough:
    • In a small bowl, mix the warm water with the yeast and sugar. Stir until the yeast dissolves completely. Cover with plastic wrap and allow it to rise for about 8 minutes until foamy.
    • In a large mixing bowl, combine the flour and salt. Add the yeast mixture; it should have foamed and nearly doubled in size.
    • Mix well until a dough forms. If sticky, add more flour gradually. Knead the dough on a floured surface until it becomes smooth and elastic, and no longer sticks to your hands.
    • Shape the dough into a ball, place it back into the bowl, and coat with olive oil. Cover again with plastic wrap and let it rise for 20-30 minutes until doubled in size.
  2. Make the Salsa Verde:
    • In a pot, combine garlic cloves, onion, poblano peppers, jalapeños, and tomatillos. Add enough water to completely cover the vegetables.
    • Boil for 15 minutes until soft. Drain and transfer the cooked vegetables to a blender. Add the salt.
    • Allow the vegetables to cool slightly, then blend until smooth to create the salsa verde.
  3. Assemble the Pizza:
    • Preheat your oven to 390°F (200°C).
    • Once the dough has risen, place it on a floured surface. Use your palms to stretch it into a large round circle, adjusting thickness to your preference.
    • Spread the salsa verde across the dough, leaving a 1-inch border around the edges.
    • Evenly distribute the Chihuahua cheese over the salsa verde, followed by the chicharrón pieces.
    • Brush the edges of the dough with olive oil to ensure a golden crust.
  4. Bake:
    • Place the assembled pizza on a baking sheet or pizza stone.
    • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the crust is golden brown.
  5. Serve:
    • Remove from the oven and let it cool slightly before slicing.
