Ingredients

🎃 1 (2lb) butternut squash
🌶️ 3 red bell peppers
🥓 8 oz of smoked bacon
🧂 Salt, to taste
🌶️ Black pepper, to taste
🌿 8-10 sage leaves (dried or fresh)
🥑 1⁄4 cup of avocado oil
🧀 1⁄4 cup of crumbled cotija cheese


Instructions

1- Prep the Squash:

  • Start by peeling the butternut squash and cutting off the ends. Slice it in half lengthwise and scoop out the seeds. Dice the squash into bite-sized pieces and place them in a large mixing bowl.

2- Prep the Peppers:

  • Remove the stems and seeds from the red bell peppers. Dice them into similar-sized pieces as the squash and add them to the bowl.

3- Prepare the Bacon:

  • Chop the smoked bacon into small pieces and add it to the bowl with the squash and peppers.

4- Seasoning:

  • Season the contents of the bowl with salt, black pepper, and sage leaves. If using fresh sage, chop it finely.

5- Coat with Oil:

  • Drizzle the avocado oil over the mixture and toss everything together until all the ingredients are well-coated.

6- Roasting:

  • Spread the mixture evenly on a sheet pan. Bake in a preheated oven at 400°F (200°C) for about 25 minutes, or until the squash is tender and bacon is crisp.
