Strawberries & Cream Roll

Ingredients
Cake:
🍚 2 cups granulated sugar
🥣 1.5 cups flour
🥄 1 tsp baking powder
🥄 1 tsp baking soda
🧂 1/2 tsp salt
🥚 6 eggs
🍓 1 cup strawberry puree
🍦 1 tsp vanilla extract
Icing:
🧀 1/2 bar cream cheese
🍂 1/2 cup powdered sugar
Filling:
🍓 1 cup chopped fresh strawberries
🍓 1 cup strawberry glaze
Instructions
1- Prepare the Strawberry Puree:
- Place about a half pound of fresh strawberries into a food processor and blend until smooth to form a puree.
- Strain the puree through a fine strainer or cheesecloth to remove excess water. Reserve the thick puree for the cake batter.
2- Make the Cake Batter:
- Preheat your oven to 375°F (190°C).
- In a mixer, combine 2 cups of granulated sugar, 1.5 cups of flour, 1 tsp of baking powder, 1 tsp of baking soda, and 1/2 tsp of salt. Mix well.
- Add 6 eggs, 1 cup of the reserved strawberry puree, and 1 tsp of vanilla extract to the dry ingredients. Mix until smooth and lump-free.
- If you wish to do decorative drawings on the cake, separate a portion of the batter, add a bit more flour to thicken it, and pipe your designs onto parchment paper placed within a half-sheet-sized baking pan.
- Bake the decorative layer for a few minutes just until set, then cool.
3- Bake the Cake:
- Pour the remaining batter over the decorated or plain parchment paper layer.
- Bake at 375°F (190°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely. Trim the top if necessary to achieve an even surface.
4- Prepare the Icing:
- Mix half a bar of room temperature cream cheese with 1/2 cup of powdered sugar until smooth to make the icing.
5- Prepare the Filling:
- Combine 1 cup of chopped fresh strawberries with 1 cup of strawberry glaze.
6- Assemble the Roll:
- Unroll the cooled cake over a fresh sheet of parchment paper. Trim the edges lengthwise for a neat finish.
- Spread the cream cheese icing evenly over the cake, leaving about 3 fingers' width of space on the side you will start rolling from.
- Spread the strawberry filling over the icing, still leaving space toward the end.
- Carefully roll the cake as tightly as possible. Wrap the roll in parchment paper to secure it and place it in the fridge for at least two hours.
- When ready, unroll and trim both ends of the cake roll for a clean presentation.
