Ingredients:
For the Chicken Jalapeño Poppers:
🍗 2 boneless chicken breasts
🧂 1 tsp salt
🍗 1 tsp chicken bouillon
⚫ ½ tsp black pepper
🧄 ½ tsp garlic powder

🌶️ ½ tsp of paprika
🌿 ½ tsp of dried cilantro
🥄 1 tbsp of cornstarch
🌶️ 6 to 8 jalapeños
🧀 6 cheese sticks
🥚 3 eggs
🥡 1 cup of all-purpose flour
🧄 Garlic powder (for seasoning)
🌶️ Paprika (for seasoning)
🍞 1 cup of panko crumbs
For the Jalapeño Mayo:
🥑 1 cup of avocado oil
🌶️ 1 chopped jalapeño
🥚 1 egg
🍋 1 tsp of lime juice
🧂 Salt (to taste)
To Assemble Tacos:
🌮 8 flour tortillas
🥬 Shredded lettuce
Instructions:
- Prepare the Chicken Filling:
- Cut the chicken breasts into chunks.
- In a food processor, blend chicken pieces with salt, chicken bouillon, black pepper, garlic powder, onion powder, paprika, cilantro, and cornstarch until ground. Set aside.
- Prep the Jalapeños and Cheese:
- Cut the jalapeños in half lengthwise. Remove seeds and stems.
- Unwrap the cheese sticks and cut each in half.
- Place a cheese piece inside each jalapeño half.
- Assemble the Jalapeño Poppers:
- Rub cooking oil on your hands for easier handling.
- Wrap the ground chicken mixture around each filled jalapeño.
- Dredge each chicken-wrapped jalapeño in all-purpose flour seasoned with garlic powder and paprika, then dip in whisked eggs, and coat with panko crumbs.
