Ingredients:
🍚 2 cups quinoa
🥄 2 tbsp cooking oil
🧈 2 tbsp butter
🧅 ¼ onion, diced
🧄 2 garlic cloves, minced
🌶️ 1 jalapeño pepper
🫑 1 green bell pepper
💧 2 cups water
🧂 2 tbsp chicken bouillon
🌿 4-6 stems of cilantro
🥛 1 cup of Mexican crema
Instructions:
- Prep Work: Begin by finely dicing ¼ of an onion and mincing 2 cloves of garlic. Slice the jalapeño and green bell pepper into small pieces.
- Sauté Aromatics: In a large pan over medium heat, add 2 tablespoons of cooking oil and 2 tablespoons of butter. Once the butter melts, add the diced onion, minced garlic, sliced jalapeño, and bell pepper. Stir and cook for about 2 minutes until fragrant.
- Add Quinoa: Introduce the 2 cups of quinoa to the pan. Stir frequently for another 2 minutes to lightly toast the quinoa.
- Simmer: Pour in 2 cups of water and add 2 tablespoons of chicken bouillon. Add the cilantro stems for a fresh, aromatic punch. Once the mixture begins boiling, reduce the heat to low, cover the pan with a lid, and let it simmer for about 10 minutes or until the water is absorbed and the quinoa is fluffy.
- Finish with Cream: Remove from heat and gently fold in 1 cup of Mexican crema until thoroughly mixed.
- Serve: Garnish with extra cilantro if desired and serve hot. Enjoy as a side dish or a main meal.
