Charro Beans
Charro Beans, also known as "party beans," are an essential part of any festive gathering, especially when paired with a sizzling carne asada. Although freshly cooked beans (frijoles de la olla) are preferred for authentic flavor, you can use canned pinto beans for a quick and delicious alternative. This hearty dish can be customized with added heat from jalapeños or chipotle peppers to suit your taste.
Ingredients
🫘 2 cans of pinto beans or 3 cups of frijoles de la olla
🥓 8 oz smoked bacon
🌶️ 4 oz pork chorizo
🧅 1⁄2 onion, diced
🌶️ 2 jalapeños, chopped
🍅 2 Roma tomatoes, diced
🌭 6 oz smoked sausage
💧 6-8 cups water
🥄 2 tbsp chicken bouillon
🧂 Salt, to taste
🧂 Black pepper, to taste
🌿 1⁄2 cup chopped cilantro
Instructions
1- Prep the Ingredients:
- Cut the bacon into small pieces.
- Dice the onion and Roma tomatoes.
- Chop the jalapeños and cilantro.
2- Cook the Bacon and Chorizo:
- Place a pot over medium heat and add the bacon pieces.
- Cook until the bacon releases its fat and is slightly brown.
- Add the chorizo to the pot and cook for about 5 minutes until fragrant.
3- Add Aromatics and Vegetables:
- Stir in the diced onion and cook until it becomes translucent.
- Add the chopped jalapeños and diced tomatoes, cooking until they soften and wilt.
4- Combine Meats and Beans:
- Add the smoked sausage slices and the beans. If you're using canned beans, include the liquid. If using freshly cooked beans, add 2 cups of the cooking liquid as well.
5- Simmer:
- Pour in the water and chicken bouillon.
- Season with salt and black pepper according to your taste.
- Stir in the chopped cilantro and bring the mixture to a boil.
6- Finish the Dish:
- Once it begins to boil and a foam forms on the surface, turn off the heat.
