Tepache
Tepache is a traditional Mexican fermented beverage made from pineapple peels, offering a delightful combination of sweetness and spice. Although not widely consumed for its health benefits, it's known to be good for your gut due to its fermentation. This eco-friendly drink is perfect for hot summer days and is a great way to use every part of the pineapple, making it a sustainable choice.
Ingredients:
🍍 1 pineapple (use the peel, optionally the pulp)
🍯 1 1/4 cups of piloncillo (300g) or panela
🌿 2 cinnamon sticks
🌶️ 1 tsp of whole allspice
💧 2 liters of hot tap water
💧 2 liters of cold tap water
Instructions
1- Prepare the Pineapple:
- Peel the pineapple and set the peels aside. If you want a sweeter tepache, chop the pineapple pulp and reserve for later use.
2- Mix Ingredients:
- In a large glass jar, combine the hot tap water, piloncillo (or panela), cinnamon sticks, and allspice. Stir well to dissolve the piloncillo completely.
3- Cool and Add Pineapple:
- Allow the mixture to cool. Once cooled and the piloncillo is dissolved, add the pineapple peels and the pulp if desired.
4- Add Cold Water:
- Pour in the cold tap water, ensuring all ingredients are submerged.
5- Fermentation Process:
- Cover the jar with a cloth secured with a string or rubber band to allow air to flow while keeping out debris and insects.
- Place the jar in a cool, dark place for fermentation. For warm climates, let it sit for 24 hours, then taste. If you want more fermentation, leave it for another day. For colder climates, start with 36 hours and adjust as needed.
6- Adjust Fermentation Time:
- If you prefer a more carbonated drink, extend the fermentation to 4 days. For a slight alcoholic kick similar to beer, ferment for at least 10 days.
7- Finishing Off:
- Once the desired fermentation is achieved, transfer the tepache to pitchers or jars and store in the refrigerator to halt further fermentation and chill the drink.
8- Serve:
- Enjoy your tepache cold, relishing the refreshing taste and sustainable use of pineapple peels.
