Tepache
Tepache is a traditional Mexican drink made from pineapple peels, piloncillo, and spices. Lightly fermented, it’s a refreshing summer beverage that also reduces food waste. Enjoy it slightly sweet or fermented longer for a more complex flavor.
Ingredients
🍍 1 pineapple (peel and optional pulp)
🍯 1 ¼ cups piloncillo (300g)
🍂 2 cinnamon sticks
🌿 1 tsp whole allspice
💧 2 liters hot tap water
💧 2 liters cold tap water

Instructions
1. Prepare the Pineapple
o Rinse the pineapple thoroughly with water and a brush to remove dirt and pesticides.
o Peel the pineapple and set aside the peel. Optionally, dice the pulp and add it for extra sweetness.
2. Dissolve the Piloncillo
o In a large glass jar or pitcher, combine the hot tap water, piloncillo, cinnamon sticks, and whole allspice.
o Stir until the piloncillo dissolves completely. Let the mixture cool to room temperature.
3. Combine Ingredients
o Add the pineapple peel (and optional pulp) to the jar.
o Pour in the cold tap water and stir gently to combine.
4. Cover and Ferment
o Cover the jar with a clean cloth secured with a rubber band to allow airflow and keep out flies.
o Place the jar in a cool, dark place.
5. Fermentation Timeline
o 24 Hours: Lightly fermented and sweet.
o 36 Hours (Colder Climates): More fermentation for deeper flavor.
o 4 Days: Carbonated tepache with a slightly tangy taste.
o 10 Days: Tepache with mild alcohol content similar to beer.
6. Taste and Adjust
o Taste the tepache daily to check fermentation level. Adjust by fermenting longer if desired.
7. Strain and Chill
o Once the desired fermentation level is reached, strain the tepache into pitchers or jars.
o Refrigerate and serve cold.
